Burning Villages
Apparently I must have set a code so that if an enemy enters one of my villages, the village gets burned when the enemy leaves. How do I turn that off?

Re: Burning Villages
There is no code for that. Are you sure it's not just part of the scenario you are playing? That happens a few times in the first scenario of Heir to the Throne for example. It is mentioned in the dialog, so you know it's intentional.
If it happens in every scenario or multiplayer map, you must have downloaded a modification that causes it (though I don't know who would want this). Modifications can be turned on/off in a drop-down list at the bottom the campaign selection window in single player, and with checkboxes on the right side of the game creation screen on multiplayer.
If that didn't help, tell us what campaign and scenario you are seeing this in.

Hey, thanks. It was in multiplayer where there is a modification option "AI Destruction" that I accidentally clicked. Who would want that? Thanks again.
